Beef Bulgogi Bowls

For the Beef Marinade:

1 lb (450g) thinly sliced beef sirloin or ribeye

1/4 cup soy sauce

2 tablespoons brown sugar

1 tablespoon sesame oil

4 cloves garlic, minced

1-inch piece ginger, grated

1 teaspoon gochujang (Korean red chili paste)

2 green onions, chopped

1 teaspoon black pepper

For the Rice Bowl:

2 cups cooked jasmine rice (or brown rice)

1 cup sliced cucumbers

1 cup shredded carrots

1 cup baby spinach or mixed greens

2 eggs (optional, for sunny-side up)

sesame seeds, for garnish

extra sliced green onions, for garnish

kimchi (optional, for serving)

Instructions
 

Marinate the Beef: In a mixing bowl, combine soy sauce, brown sugar, sesame oil, minced garlic, grated ginger, gochujang, chopped green onions, and black pepper. Add the thinly sliced beef to the marinade, ensuring all pieces are well coated. Cover and let it marinate in the refrigerator for at least 30 minutes (or up to 3 hours for deeper flavor).

    Prepare the Rice: While the beef marinates, cook your jasmine rice according to package instructions. Once cooked, fluff it with a fork and set aside.

      Cook the Beef: Heat a large skillet or a grill pan over medium-high heat. Once hot, add the marinated beef in batches (avoid overcrowding) and cook for about 3-4 minutes until browned and cooked through. Stir-fry the beef to ensure it’s evenly cooked.

        Prepare the Toppings: If using eggs, lightly coat another pan with oil, and fry the eggs sunny-side up, cooking until the whites are set but the yolks remain runny.

          Assemble the Bowls: In serving bowls, layer the cooked rice as the base. Top with the cooked beef, then arrange the sliced cucumbers, shredded carrots, and baby spinach or mixed greens around the beef.

            Garnish: Sprinkle sesame seeds and extra sliced green onions over the bowls. Top with a fried egg if using, and serve with kimchi on the side for an extra zing.
