For the Beef Marinade:

1 lb (450g) beef sirloin, thinly sliced

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon cornstarch

1 teaspoon ground ginger

1 teaspoon garlic powder

For the Stir-Fry:

8 oz (225g) egg noodles

2 tablespoons vegetable oil

1 bell pepper, sliced (any color)

1 cup broccoli florets

1 medium carrot, julienned

3 green onions, chopped (white and green parts separated)

3 cloves garlic, minced

1 tablespoon sesame oil

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 teaspoon sugar

Salt and pepper to taste

Sesame seeds, for garnish (optional)

Instructions
 

Marinate the Beef:

    - In a medium bowl, combine the soy sauce, oyster sauce, cornstarch, ginger, and garlic powder. Add the thinly sliced beef, ensuring all pieces are coated. Cover and let marinate for at least 30 minutes (or up to 2 hours for more flavor) in the refrigerator.

      Cook the Egg Noodles:

        - Bring a large pot of salted water to a boil. Add the egg noodles and cook according to package instructions until al dente. Drain and set aside, reserving a little pasta water.

          Stir-Fry the Vegetables:

            - In a large wok or skillet, heat 1 tablespoon of vegetable oil over medium-high heat. Add the sliced bell pepper, broccoli florets, and julienned carrot. Stir-fry for about 5-7 minutes until vegetables are crisp-tender. Add the minced garlic and the white parts of the green onions, and stir-fry for another minute until fragrant. Remove the vegetables from the wok and set aside.

              Cook the Beef:

                - In the same wok, add the remaining tablespoon of vegetable oil. Increase the heat to high and add the marinated beef in a single layer. Cook for about 2-3 minutes without stirring to get a good sear. Then stir-fry until the beef is cooked through, about another 2-3 minutes.

                  Combine Ingredients:

                    - Return the cooked vegetables to the wok with the beef. Add the cooked egg noodles, sesame oil, soy sauce, rice vinegar, and sugar. Toss everything together until well combined; if the mixture seems dry, add a splash of reserved pasta water. Season with salt and pepper to taste.

                      Garnish and Serve:

                        - Once everything is well mixed and heated through, remove from heat. Transfer to serving plates and garnish with chopped green onion tops and sesame seeds if desired.
