BBQ Ranch Chicken Quinoa Bowls

1 cup quinoa, rinsed

2 cups water or chicken broth

1 lb boneless, skinless chicken breasts

1 cup BBQ sauce (your favorite brand)

1/2 cup ranch dressing

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

1 cup corn (fresh, canned, or frozen)

1 cup black beans, rinsed and drained

1 cup cherry tomatoes, halved

1 avocado, sliced

1 cup shredded cheddar cheese

1/4 cup chopped fresh cilantro (for garnish)

Lime wedges, for serving

Instructions
 

Prepare the Quinoa: In a medium-sized pot, bring 2 cups of water or chicken broth to a boil. Add the rinsed quinoa, cover, and reduce the heat to low. Simmer for about 15 minutes or until all the liquid is absorbed and the quinoa is fluffy. Remove from heat and let it sit, covered, for another 5 minutes. Fluff with a fork.

    Cook the Chicken: While the quinoa is cooking, season the chicken breasts with olive oil, garlic powder, onion powder, salt, and pepper. In a large skillet over medium heat, cook the chicken for about 5-7 minutes on each side, or until fully cooked and golden brown. The internal temperature should reach 165°F (75°C).

      Add BBQ Sauce: Once the chicken is cooked, remove it from the skillet and let it rest for a few minutes. Then, shred or chop the chicken and toss it in the BBQ sauce until fully coated.
