BBQ Lentil Sliders

Ingredients
  

1 cup dried green or brown lentils

2 cups vegetable broth

1 medium onion, finely chopped

3 cloves garlic, minced

1 bell pepper (red or green), finely diced

1 cup breadcrumbs (preferably whole wheat)

1/4 cup BBQ sauce (plus extra for topping)

1 tsp smoked paprika

1 tsp cumin

1/2 tsp chili powder

Salt and pepper to taste

2 tbsp olive oil

4 burger buns

Lettuce, tomato, and pickles for serving

Instructions
 

Cook the Lentils: Rinse the lentils under cold water, then combine them with vegetable broth in a medium saucepan. Bring to a boil, then reduce heat and let simmer for about 30 minutes, or until lentils are tender but not mushy. Drain any excess liquid and set aside.

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and bell pepper, and sauté until softened, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant.

      Combine Ingredients: In a mixing bowl, combine the cooked lentils, sautéed vegetables, breadcrumbs, BBQ sauce, smoked paprika, cumin, chili powder, salt, and pepper. Mix well until all ingredients are uniformly combined. If the mixture feels too wet, add more breadcrumbs as needed.

        Form Sliders: Shape the lentil mixture into small patties, about 2-3 inches in diameter. You should be able to make approximately 8 small sliders.

          Cook the Sliders: Wipe the skillet clean, return to medium-high heat, and add a little more olive oil. Cook the lentil patties for about 4-5 minutes on each side, or until they are golden brown and crispy on the outside.

            Assemble the Sliders: Toast the burger buns lightly if desired. Place a lentil patty on each bun, slather with additional BBQ sauce, and top with lettuce, tomato slices, and pickles.

              Serve and Enjoy: Serve the sliders warm with your favorite sides like sweet potato fries or a fresh salad. Enjoy!
