1 can (15 oz) chickpeas, drained and rinsed

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 red bell pepper, finely diced

1 cup BBQ sauce (store-bought or homemade)

1 tablespoon apple cider vinegar

1 teaspoon smoked paprika

1 teaspoon cumin

Salt and pepper to taste

4-6 whole wheat slider buns

Fresh parsley or cilantro, for garnish (optional)

Prepare the Chickpeas: In a medium bowl, use a fork or potato masher to roughly mash the chickpeas. You want some whole chickpeas left for texture, but they should be mostly mashed.

    Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent. Stir in the garlic and bell pepper, cooking for an additional 2-3 minutes until the peppers are slightly softened.

      Combine Ingredients: Add the mashed chickpeas to the skillet along with the BBQ sauce, apple cider vinegar, smoked paprika, cumin, salt, and pepper. Stir everything together until well combined. Let it cook for about 5-7 minutes, stirring occasionally, until heated through and slightly thickened.

        Toast the Buns: While the chickpea mixture is cooking, you can toast the whole wheat slider buns on a grill or in a toaster until golden brown.
