Cilantro is a key ingredient in the Smoky BBQ Chicken Chopped Salad, providing a fresh, vibrant flavor that enhances the overall dish. Its slightly citrusy and herbal notes perfectly complement the smokiness of the BBQ chicken, balancing the richness of the salad. However, cilantro can be polarizing; some people absolutely love it, while others find its taste soapy. If you or your guests fall into the latter category, consider substituting cilantro with fresh parsley or mint for a similar freshness without the distinctive flavor of cilantro. Another alternative could be to use a squeeze of lime juice to brighten the salad instead.

1/2 red onion, finely diced

1 avocado, diced

1 cup shredded cheddar cheese

1/2 cup tortilla strips (for crunch)

1/4 cup cilantro, chopped (for garnish)

Salt and pepper to taste

Instructions

In a mixing bowl, combine the shredded chicken and BBQ sauce. Stir well until the chicken is fully coated. Set aside to marinate for about 10 minutes while you prepare the salad ingredients.

In a large salad bowl, combine the chopped romaine lettuce, cherry tomatoes, corn, black beans, and red onion. Toss gently to mix the ingredients evenly.

After marinating, add the BBQ chicken to the salad bowl and toss again until everything is well combined.

Gently fold in the diced avocado and shredded cheddar cheese. Season with salt and pepper to taste.

To serve, divide the salad among plates or bowls. Top with tortilla strips for added crunch and garnish with chopped cilantro. Serve with lime wedges on the side for a zesty kick.
