Basil Ranch Chicken and Salami Quesadilla with Avocado

2 boneless, skinless chicken breasts

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried basil

1 teaspoon ranch seasoning mix

Salt and pepper to taste

4 large flour tortillas

1 cup shredded mozzarella cheese

½ cup salami, sliced

1 avocado, sliced

½ cup cherry tomatoes, halved

Fresh basil leaves for garnish

Sour cream or ranch dressing for serving

Instructions
 

Prepare the Chicken: In a bowl, mix together the olive oil, garlic powder, onion powder, dried basil, ranch seasoning, salt, and pepper to create a marinade. Coat the chicken breasts in the mixture and allow to marinate for at least 15 minutes.

    Cook the Chicken: Heat a grill pan or skillet over medium heat. Add the marinated chicken breasts and cook for 5-7 minutes per side or until the internal temperature reaches 165°F (74°C). Once cooked, remove from heat and let the chicken rest for a few minutes before slicing it into thin strips.

      Assemble the Quesadillas: Preheat a large skillet over medium heat. Lay one tortilla flat in the skillet. Sprinkle half of the mozzarella cheese on one side, then layer on the sliced chicken, salami pieces, and some cherry tomatoes. Top with the remaining mozzarella cheese and place another tortilla over the fillings.

        Cook the Quesadilla: Cook the quesadilla for 3-4 minutes until the bottom tortilla is golden and the cheese begins to melt. Carefully flip the quesadilla using a large spatula and cook for an additional 3-4 minutes on the other side until golden and crispy.

          Repeat: Remove the cooked quesadilla from the skillet and keep warm in a kitchen towel. Repeat the assembly and cooking process with the remaining tortillas and filling.

            Serve: Once all quesadillas are cooked, slice them into wedges. Serve warm, garnished with fresh basil leaves and accompanied by avocado slices and a side of sour cream or ranch dressing.
