4 boneless, skinless chicken thighs

2 ripe peaches, pitted and sliced

1 medium red onion, thinly sliced

2 cups fresh basil leaves, loosely packed

3 cloves garlic, minced

1 tablespoon olive oil

1 tablespoon balsamic vinegar

1 teaspoon honey

Salt and pepper to taste

1 teaspoon fresh thyme (optional)

Crumbled feta cheese for garnish (optional)

Prepare the Chicken: Season the chicken thighs with salt, pepper, and thyme (if using). In a large skillet, heat the olive oil over medium-high heat.

    Sear the Chicken: Add the chicken thighs to the skillet and cook for about 6-7 minutes on each side or until they are golden brown and cooked through (internal temperature should reach 165°F). Once done, remove the chicken from the skillet and set aside.

      Sauté the Onions and Garlic: In the same skillet, add the sliced red onions and sauté for 3-4 minutes until they become translucent. Then, add the minced garlic and sauté for another minute until fragrant.

        Add Peaches and Basil: Stir in the sliced peaches and cook for an additional 2-3 minutes until they soften slightly. Add the fresh basil leaves and stir everything together gently.

          Make the Sauce: Drizzle the balsamic vinegar and honey over the mixture in the skillet. Stir to combine and allow the flavors to meld for about 2 minutes. Taste and adjust seasoning with additional salt and pepper if necessary.

            Combine: Return the seared chicken thighs to the skillet. Spoon the peach and basil mixture over the chicken, allowing it to heat through for another minute.

              Serve: Remove from heat and serve hot. Optionally, sprinkle crumbled feta cheese on top for a tangy finish.
