For the crust:

1 ½ cups vanilla wafer crumbs

½ cup unsalted butter, melted

2 tablespoons sugar

For the cheesecake filling:

4 (8 oz) packages cream cheese, softened

1 cup granulated sugar

1 cup sour cream

4 large eggs

1 teaspoon vanilla extract

2 ripe bananas, mashed

1 tablespoon lemon juice

For the banana pudding layer:

1 cup cold milk

1 (3.4 oz) package instant vanilla pudding mix

1 ½ cups whipped cream (homemade or store-bought)

2 bananas, sliced

For the topping:

Extra whipped cream for decorating

Vanilla wafers for garnish

Slices of banana for garnish

Instructions
 

Prepare the crust:

    - Preheat the oven to 350°F (175°C).

      - In a mixing bowl, combine the vanilla wafer crumbs, melted butter, and sugar. Mix well until the crumbs are evenly coated.

        - Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 8-10 minutes, then remove from the oven and let it cool while preparing the filling.

          Make the cheesecake filling:

            - In a large mixing bowl, beat the softened cream cheese and sugar with an electric mixer until smooth and creamy.

              - Add the sour cream, and mix until well combined.

                - Add the eggs, one at a time, mixing well after each addition.

                  - Stir in the vanilla extract, mashed bananas, and lemon juice until well combined.

                    - Pour the cheesecake filling over the cooled crust and smooth the top. Bake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly.

                      Cool down:

                        - Once baked, turn off the oven and leave the cheesecake inside with the door slightly ajar for an hour. This helps to prevent cracking. Afterward, remove from the oven and let it cool to room temperature. Chill in the refrigerator for at least 4 hours or overnight.

                          Prepare the banana pudding layer:

                            - In a bowl, whisk together the cold milk and instant vanilla pudding mix until smooth and thickened (about 2 minutes).

                              - Gently fold in the whipped cream until no streaks remain. Layer banana slices at the bottom of the chilled cheesecake and spread the banana pudding mixture on top.

                                Finish it off:

                                  - Decorate with extra whipped cream, crushed vanilla wafers, and banana slices on top. Chill for an additional hour before serving.

                                    Serve:
