Ingredients

2 ripe bananas, sliced

1 pre-made 9-inch graham cracker pie crust

1 cup heavy whipping cream

1 cup milk

1/2 cup granulated sugar

1/4 cup cornstarch

1/4 teaspoon salt

1 teaspoon vanilla extract

3 large egg yolks

1 tablespoon unsalted butter

Additional banana slices and whipped cream for topping

Instructions

In a medium saucepan, whisk together the sugar, cornstarch, and salt. Slowly add the milk while stirring to create a smooth mixture.

Over medium heat, cook the mixture while continuously stirring until it thickens and just begins to bubble. This should take about 5-7 minutes.

In a separate small bowl, lightly beat the egg yolks. Once the milk mixture is bubbling, slowly add a few tablespoons of it to the egg yolks to temper them. Stir quickly to avoid cooking the eggs.

Pour the tempered egg mixture back into the saucepan and continue cooking for an additional 2-3 minutes until very thick. Remove from heat.

Stir in the butter and vanilla extract until smooth and combined. Let the mixture cool for about 10 minutes.

Slice the bananas and lay them evenly on the bottom of the graham cracker crust. Pour the cooled pudding mixture over the bananas, spreading it evenly.

Cover the pie with plastic wrap and refrigerate for at least 3 hours or until set.

Before serving, whip the heavy cream until soft peaks form. Spread or pipe the whipped cream over the pie.

Garnish with additional banana slices on top and serve chilled. Enjoy your delightful Banana Bliss Cream Pie!
