2 ripe bananas, mashed

1 cup rolled oats

1/4 cup almond butter (or any nut butter of choice)

1/4 cup honey (or maple syrup for a vegan alternative)

1/4 cup chia seeds

1/2 teaspoon vanilla extract

1/2 teaspoon cinnamon

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup dark chocolate chips (optional)

1/2 cup chopped nuts (e.g., walnuts or pecans, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Mix Wet Ingredients: In a large mixing bowl, add the mashed bananas, almond butter, honey, and vanilla extract. Stir until well combined and smooth.

      Combine Dry Ingredients: In a separate bowl, mix the rolled oats, chia seeds, cinnamon, baking powder, and salt. Stir until evenly combined.

        Combine the Mixtures: Gradually add the dry ingredients to the wet ingredients. Stir until the mixture is fully incorporated. If you're adding chocolate chips and/or nuts, fold them in at this stage.

          Form Cookies: Using a tablespoon or cookie scoop, drop spoonfuls of the dough onto the prepared baking sheet, spacing them about 2 inches apart. Press down slightly to flatten them into cookie shapes.

            Bake: Place the baking sheet in the preheated oven and bake for 12-15 minutes or until the edges are golden brown.

              Cool: Once done, remove the cookies from the oven and let them cool on the baking sheet for 5 minutes. Then, transfer them to a wire rack to cool completely.

                Serve or Store: Enjoy these nutritious cookies warm or store them in an airtight container for up to a week.
