Ingredients

2 ripe bananas, mashed

1/2 cup unsalted butter, melted

3/4 cup brown sugar, packed

1/4 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 1/2 cups all-purpose flour

1/2 cup chocolate chips (or chopped walnuts for a nutty twist)

1/4 cup shredded coconut (optional, for added texture and flavor)

Instructions

Preheat your oven: Preheat the oven to 350°F (175°C) and grease a 9x9-inch baking pan or line it with parchment paper for easy removal.

Mix the wet ingredients: In a mixing bowl, combine the mashed bananas and melted butter. Whisk until smooth and well combined. Then add the brown sugar and granulated sugar, whisking again until fully incorporated.

Add egg and vanilla: Stir in the egg and vanilla extract until the mixture is creamy and uniform.

Combine dry ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.

Combine wet and dry mixtures: Gradually add the dry mixture to the wet mixture, stirring until just combined. Be careful not to overmix; a few lumps are okay.

Fold in chocolate chips: Gently fold in the chocolate chips and shredded coconut, if using, until evenly distributed throughout the batter.

Transfer to the baking pan: Pour the batter into the prepared baking pan and spread it out evenly with a spatula.

Bake: Bake in the preheated oven for 25-30 minutes or until the edges are golden brown and a toothpick inserted into the center comes out with a few moist crumbs (not wet batter).

Cool and slice: Once baked, remove the blondies from the oven and let them cool in the pan for about 10 minutes. Use the parchment paper to lift them out easily, then allow to cool completely on a wire rack. Once cool, slice into squares.

Serve and enjoy: Serve them warm or at room temperature. Perfect with a glass of milk or your favorite hot beverage!
