2 cups fresh strawberries, hulled and halved

2 tablespoons balsamic vinegar

1 tablespoon honey

1 tablespoon olive oil

1 pound boneless, skinless chicken breast

Salt and pepper, to taste

6 cups mixed greens (e.g., spinach, arugula, and romaine)

1/2 cup crumbled feta cheese

1/4 cup walnuts, toasted and roughly chopped

1/4 cup red onion, thinly sliced

1/4 cup balsamic vinaigrette (store-bought or homemade)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Roast the Strawberries: In a medium bowl, combine the halved strawberries with 2 tablespoons of balsamic vinegar and 1 tablespoon of honey. Toss to coat. Spread the strawberries in a single layer on a baking sheet lined with parchment paper. Roast in the preheated oven for 15-20 minutes until they are soft and caramelized.

      Prepare the Chicken: While the strawberries are roasting, season the chicken breasts generously with salt and pepper. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
