Balsamic Roasted Carrot Medley

1 lb (450g) assorted carrots (rainbow, yellow, and orange), peeled and cut into sticks

2 tablespoons olive oil

3 tablespoons balsamic vinegar

1 tablespoon honey (or maple syrup for a vegan option)

2 cloves garlic, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

Salt and pepper, to taste

Optional: ¼ cup feta cheese, crumbled (for serving)

Optional: Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper for easy cleanup.

    Prepare the Carrots: In a large mixing bowl, combine the peeled and cut carrot sticks with olive oil, balsamic vinegar, honey, minced garlic, thyme, salt, and pepper. Toss well to ensure all the carrots are evenly coated with the marinade.

      Arrange on Baking Sheet: Spread the seasoned carrots out in a single layer on the lined baking sheet. Make sure they’re not overcrowded to allow for even roasting.

        Roast the Carrots: Place the baking sheet in the preheated oven and roast for about 20-25 minutes, or until the carrots are tender and caramelized, tossing them halfway through for even cooking.

          Optional Toppings: If using, sprinkle crumbled feta cheese on top of the roasted carrots during the last 5 minutes of roasting to allow it to soften slightly.

            Serve: Remove from the oven, sprinkle with fresh chopped parsley for garnish if desired, and serve warm as a delightful side dish to your main course. Enjoy!
