Ingredients

2 1/4 cups all-purpose flour

1/2 teaspoon baking soda

1/2 teaspoon salt

1 cup unsalted butter, softened (2 sticks)

3/4 cup granulated sugar

3/4 cup packed brown sugar, light or dark

1 teaspoon vanilla extract

2 large eggs

1 cup white chocolate chips

1 cup macadamia nuts, coarsely chopped

Optional: A sprinkle of sea salt for topping

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line two large baking sheets with parchment paper.

Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.

Cream Butter and Sugars: In a large mixing bowl, using an electric mixer, beat the softened butter, granulated sugar, and brown sugar together on medium speed until light and fluffy, about 3-4 minutes.

Add Eggs and Vanilla: Add the eggs one at a time, mixing well after each addition. Then, mix in the vanilla extract until fully incorporated.

Combine Dry Ingredients: Gradually add the flour mixture to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix.

Fold in Chocolate and Nuts: Gently fold in the white chocolate chips and chopped macadamia nuts with a spatula, ensuring they are evenly distributed in the dough.

Scoop the Dough: Use a cookie scoop or tablespoon to drop rounded balls of dough onto the prepared baking sheets, spacing them about 2 inches apart. If desired, sprinkle a little sea salt on top of each dough ball for added flavor.

Bake the Cookies: Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden but the centers are still soft. Remember, they will continue to cook a bit on the baking sheet once removed from the oven.

Cool the Cookies: Allow the cookies to cool on the baking sheets for about 5 minutes before transferring them to wire racks to cool completely.

Enjoy: Serve warm or at room temperature. These cookies are perfect with a glass of milk or a warm cup of tea!
