2 medium zucchinis

3 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon sea salt

¼ teaspoon black pepper

½ cup grated Parmesan cheese (optional for a cheesy twist)

Fresh herbs (such as thyme or rosemary) for garnish (optional)

Instructions
 

Preheat the Oven: Start by preheating your oven to 225°F (110°C). This low temperature helps dehydrate rather than bake them, ensuring your chips are crispy.

    Prepare the Zucchini: Wash the zucchinis thoroughly and slice them into thin rounds, about 1/8 inch thick. You can use a sharp knife or a mandoline for uniform slices.

      Salt the Zucchini: Place the zucchini slices in a colander and sprinkle some sea salt over them. Let them sit for about 30 minutes to draw out excess moisture. This step is crucial for achieving crispiness.

        Dry the Slices: After 30 minutes, pat the zucchini slices dry with a clean kitchen towel or paper towel to remove any moisture.

          Season the Slices: In a large bowl, combine olive oil, garlic powder, onion powder, smoked paprika, black pepper, and the optional Parmesan cheese. Add the zucchini slices and toss until they are evenly coated.

            Bake the Chips: Spread the seasoned zucchini slices in a single layer on a parchment-lined baking sheet. Make sure the slices do not overlap to ensure even cooking.

              Bake: Place the baking sheet in the preheated oven and bake for about 1.5 to 2 hours. Check around the 1-hour mark and rotate the baking sheet for even baking. They are ready when they are golden brown and crispy.
