Ingredients

2 large sweet potatoes

3 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

1/2 teaspoon ground cumin

1/2 teaspoon sea salt

1/4 teaspoon black pepper

1 tablespoon freshly chopped rosemary (or 1 teaspoon dried rosemary)

1 tablespoon freshly grated Parmesan cheese (optional)

A sprinkle of chili powder or cayenne pepper (optional for heat)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

Prepare the Sweet Potatoes: Wash and scrub the sweet potatoes well. Pat them dry with a towel. Cut each sweet potato into wedges, approximately 1/2 inch thick.

Season the Wedges: In a large mixing bowl, combine the olive oil, garlic powder, smoked paprika, ground cumin, sea salt, black pepper, and rosemary. Add the sweet potato wedges to the bowl and toss well to ensure they are evenly coated with the seasoning mixture.

Arrange on Baking Sheet: Spread the seasoned wedges in a single layer on the prepared baking sheet, ensuring they don't overlap for even cooking.

Bake the Wedges: Place the baking sheet in the preheated oven and bake for about 25-30 minutes, flipping the wedges halfway through to ensure they crisp up evenly. They should be golden brown and tender when done.

Add the Finishing Touches: If using Parmesan, sprinkle it over the sweet potato wedges during the last 5 minutes of baking for a deliciously cheesy and crispy finish.

Serve: Remove the wedges from the oven, allow them to cool slightly, and serve warm. They pair wonderfully with your choice of dipping sauce, such as homemade garlic aioli, yogurt dip, or spicy ketchup!
