4 medium zucchinis

1 cup cherry tomatoes, halved

1/2 cup breadcrumbs (preferably panko for extra crunch)

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon dried Italian herbs (or mixed herbs)

2 tablespoons olive oil

Salt and black pepper to taste

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 400°F (200°C).

    Prepare the Zucchini: Wash the zucchinis and slice them in half lengthwise. Using a spoon, carefully scoop out the seeds and some flesh, creating boats. Leave about 1/4 inch of flesh to keep them sturdy.

      Season the Zucchini: Brush the hollowed-out zucchini halves with olive oil and season them with salt and black pepper. Place them cut-side up on a lined baking sheet.

        Make the Filling: In a medium mixing bowl, combine the halved cherry tomatoes, breadcrumbs, Parmesan cheese, garlic powder, dried Italian herbs, and a pinch of salt and pepper. Mix well to ensure all ingredients are evenly combined.

          Stuff the Zucchini Boats: Spoon the filling mixture generously into each zucchini boat, packing it in slightly. Make sure to distribute the filling evenly among all the boats.

            Bake: Place the stuffed zucchini boats in the preheated oven and bake for 20-25 minutes, or until the zucchini is tender and the tops are golden brown.
