Baked Mozzarella Stuffed Turkey Meatballs

Ingredients
  

1 lb (450g) ground turkey

1 cup breadcrumbs

1/4 cup grated Parmesan cheese

1/4 cup fresh parsley, chopped

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1 teaspoon Italian seasoning

1/2 teaspoon salt

1/4 teaspoon black pepper

1 large egg

1 cup mozzarella cheese, cut into small cubes

2 cups marinara sauce (homemade or store-bought)

Olive oil (for drizzling)

Instructions
 

Preheat Your Oven:

    Preheat your oven to 400°F (200°C) and lightly grease a baking sheet or line it with parchment paper.

      Mix the Meatball Ingredients:

        In a large mixing bowl, combine the ground turkey, breadcrumbs, Parmesan cheese, parsley, garlic powder, onion powder, Italian seasoning, salt, pepper, and the egg. Mix well until all ingredients are thoroughly combined.

          Form the Meatballs:

            With your hands, take a small handful of the turkey mixture (about 2 tablespoons) and flatten it slightly. Place a cube of mozzarella cheese in the center and fold the meat over it, forming a ball. Ensure the cheese is completely encased. Repeat this process until all the mixture is used.

              Prepare for Baking:

                Place the meatballs on the prepared baking sheet, spaced evenly apart. Once all meatballs are formed, lightly drizzle them with olive oil to help with browning.

                  Bake the Meatballs:

                    Bake in the preheated oven for about 20-25 minutes, or until the meatballs are cooked through and golden brown on the outside. Use a meat thermometer to ensure the internal temperature reaches 165°F (75°C).

                      Warm the Marinara Sauce:

                        While the meatballs bake, heat the marinara sauce in a small saucepan over medium heat until warmed through.

                          Serve:

                            Once the meatballs are done, remove them from the oven and let them cool for a few minutes. Serve them warm with marinara sauce drizzled over the top and additional mozzarella cheese if desired. Garnish with extra parsley for a pop of color.
