Ingredients

1 pound (450g) potato gnocchi (store-bought or homemade)

1 tablespoon olive oil

1 small onion, finely chopped

3 cloves garlic, minced

1 can (14 ounces) crushed tomatoes

1/2 cup heavy cream

1 teaspoon Italian seasoning (oregano, basil, thyme blend)

Salt and pepper to taste

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

Fresh basil leaves for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Cook the Gnocchi: In a large pot of salted boiling water, cook the gnocchi according to package instructions. Once they float to the top (usually within 2-3 minutes), they are done. Drain and set aside.

Prepare the Sauce: In a large skillet over medium heat, add the olive oil. Once hot, add the chopped onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for another minute until fragrant.

Add Tomatoes and Cream: Pour in the crushed tomatoes, followed by the heavy cream. Stir well to combine, then add the Italian seasoning, salt, and pepper. Bring to a simmer and let cook for 5-7 minutes, allowing the flavors to meld together.

Combine Gnocchi and Sauce: Gently fold the cooked gnocchi into the tomato cream sauce until well coated.

Assemble for Baking: Transfer the gnocchi and sauce mixture to a 9x13-inch baking dish. Sprinkle the shredded mozzarella and grated Parmesan evenly over the top.

Bake: Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the cheese is bubbly and golden brown.

Serve: Once baked, let the dish cool for a few minutes. Garnish with fresh basil leaves if desired, and serve hot.
