Ingredients

4 cod fillets (about 6 oz each)

4 tablespoons olive oil

4 cloves garlic, minced

Zest of 1 lemon

Juice of 1 lemon

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Lemon slices (for garnish)

Instructions

Preheat Oven: Preheat your oven to 400°F (200°C).

Prepare Baking Dish: Lightly grease a baking dish with a tablespoon of olive oil.

Make Marinade: In a small bowl, mix together the remaining olive oil, minced garlic, lemon zest, lemon juice, oregano, thyme, salt, and pepper to create a marinade.

Marinate Cod: Place the cod fillets in the prepared baking dish. Pour the marinade over the fillets, ensuring they are well coated. Let them marinate for 15-20 minutes to absorb the flavors.

Bake Cod: Cover the dish with aluminum foil and bake in the preheated oven for 15 minutes. After 15 minutes, remove the foil and bake for an additional 5-7 minutes, or until the fish flakes easily with a fork.

Serve: Once cooked, remove the cod from the oven. Plate the fillets and drizzle any remaining sauce from the dish over them. Garnish with freshly chopped parsley and lemon slices before serving.

Enjoy: Serve warm with a side of steamed vegetables or over a bed of rice for a complete meal.
