Baked Carrot Zucchini Fritters

2 medium zucchinis, grated

2 medium carrots, grated

1 cup all-purpose flour (or gluten-free flour)

1/2 cup grated Parmesan cheese (or nutritional yeast for a vegan version)

2 large eggs (or flax eggs for a vegan version)

1/4 cup fresh parsley, chopped

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

Olive oil spray (or a drizzle of olive oil)

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the Veggies: In a large mixing bowl, combine the grated zucchini and carrots. Sprinkle a little salt over them and let them sit for about 10 minutes. This will help extract excess moisture.

      Squeeze Out Excess Water: After 10 minutes, use a clean dish towel or cheesecloth to wring out any excess water from the zucchini and carrot mixture. This step is crucial to ensure your fritters are crispy and not soggy.

        Mix Ingredients Together: In the same bowl, add the grated Parmesan cheese, flour, eggs, parsley, minced garlic, onion powder, garlic powder, black pepper, and salt. Mix well until everything is combined and has a dough-like consistency.
