Baked Beef Cannelloni

12 cannelloni tubes

1 lb (450g) ground beef

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 can (15 oz) tomato sauce

1 can (15 oz) diced tomatoes (with herbs)

2 tablespoons fresh basil, chopped (or 1 tsp dried)

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

Olive oil for sautéing

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Filling: In a large skillet, heat a drizzle of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute. Add the ground beef, breaking it apart with a spoon, and cook until browned. Drain any excess fat.

      Mix with Cheeses: In a large mixing bowl, combine the cooked beef mixture, ricotta cheese, half of the mozzarella cheese, half of the Parmesan cheese, fresh basil, oregano, salt, and pepper. Mix thoroughly to combine.

        Stuff the Cannelloni: Fill each cannelloni tube with the beef and cheese mixture using a small spoon or a piping bag. Place the filled cannelloni in a single layer in a 9x13 inch baking dish.

          Prepare the Sauce: In a medium bowl, combine the tomato sauce and diced tomatoes. Pour the sauce evenly over the stuffed cannelloni, ensuring all are covered.

            Top it Off: Sprinkle the remaining mozzarella and Parmesan cheese on top of the sauce.

              Bake: Cover the baking dish with foil and bake in the preheated oven for 25 minutes. After 25 minutes, remove the foil and bake for an additional 15-20 minutes until the cheese is bubbly and golden.

                Let it Rest: Remove from the oven and allow to cool for 5-10 minutes before serving. Garnish with extra chopped basil if desired.
