4 slices of thick-cut bacon

2 large eggs

1 ripe avocado, halved and pitted

2 slices of whole grain bread (or your preferred type)

1 tablespoon mayonnaise (optional)

1 tablespoon olive oil

Salt and pepper to taste

Fresh arugula or spinach (optional)

Hot sauce (optional, for extra kick)

Instructions
 

Cook the Bacon: In a large skillet over medium heat, add the bacon slices. Cook until crispy, about 6-8 minutes, flipping occasionally. Once done, transfer the bacon to a paper towel-lined plate to drain excess grease.

    Toast the Bread: In the same skillet, remove excess bacon grease, leaving about 1 teaspoon for flavor. Place the slices of bread in the skillet and toast them until golden brown on both sides, about 2-3 minutes per side. Alternatively, you can use a toaster.

      Cook the Eggs: On medium-high heat, add olive oil to the skillet. Crack the eggs directly into the skillet. Cook sunny-side up or over-easy depending on your preference, about 3-4 minutes. Season with salt and pepper.

        Prepare the Avocado: While the eggs are cooking, scoop the avocado flesh into a bowl. Mash it lightly with a fork, adding salt and pepper to taste. For extra flavor, you can mix in a dash of lime juice.

          Assemble the Sandwich: Spread mayonnaise on one side of each piece of toasted bread (if using). On one slice, layer the mashed avocado, followed by the crispy bacon, and the egg. If desired, add fresh arugula or spinach for a peppery crunch and drizzle with hot sauce for heat. Top it with the second slice of bread.
