4 large whole wheat tortillas

1 cup hummus (or any favorite spread)

1 cup shredded carrots

1 cup cucumber, thinly sliced

1 cup bell peppers, thinly sliced (any color)

1 cup cherry tomatoes, halved

1 cup baby spinach

½ cup shredded cheese (cheddar, mozzarella, or your choice)

¼ cup sunflower seeds (or any preferred nuts)

¼ cup dried cranberries or raisins

Salt and pepper to taste

Optional: Cucumber and carrot sticks for dipping

Instructions
 

Prepare the Ingredients: Start by washing and slicing the cucumber, bell peppers, and cherry tomatoes. Shred the carrots if not using pre-shredded.

    Lay Out the Tortillas: Place each tortilla on a flat surface. Spread a generous layer of hummus evenly across each tortilla, leaving about an inch of space from the edge.

      Layer the Veggies: On top of the hummus, start layering the shredded carrots, cucumber slices, bell pepper strips, spinach, and halved cherry tomatoes. Try to keep the ingredients towards the center of the tortilla.

        Add Cheese & Crunch: Sprinkle shredded cheese on top of the vegetable layers, followed by a sprinkle of sunflower seeds and dried cranberries for a delightful crunch and sweetness. Season with salt and pepper to taste.

          Fold the Tortillas: To form the wrap, fold the sides of the tortilla in towards the center, then roll it from the bottom upward to create a tight wrap. Ensure all fillings are enclosed within the tortilla.

            Cut and Serve: Once wrapped, use a sharp knife to cut the wrap in half diagonally. This makes it easier to eat and gives a pleasing presentation. Optionally, serve with carrot and cucumber sticks on the side for dipping.

              Packing for School: Wrap each crunch wrap in parchment paper or foil for easy packing in your child’s lunchbox. They can be enjoyed cold or at room temperature!
