2 cups pasta (rotini or penne works well)

1 cup cherry tomatoes, halved

1 cup cucumber, diced

½ cup bell pepper, diced (red or yellow)

½ cup diced red onion

1 cup sweet corn (canned or frozen)

1 cup cooked chicken (shredded or cubed, optional for protein)

½ cup black olives, sliced

¼ cup feta cheese, crumbled

½ cup balsamic vinaigrette dressing

2 tablespoons fresh parsley, chopped

Salt and pepper to taste

Cook the Pasta: Start by boiling a large pot of salted water. Add the pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool it down.
