Avocado Cilantro Lime Chicken

4 boneless, skinless chicken breasts

2 ripe avocados, peeled and pitted

1/4 cup fresh cilantro, chopped

1/4 cup lime juice (freshly squeezed, about 2-3 limes)

3 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon paprika

Salt and pepper, to taste

2 tablespoons olive oil

Lime wedges, for serving

Extra cilantro, for garnish

Instructions
 

Prepare the Marinade: In a blender or food processor, combine the avocados, cilantro, lime juice, minced garlic, cumin, paprika, salt, and pepper. Blend until smooth and creamy. Taste and adjust seasoning as needed.

    Marinate the Chicken: Place the chicken breasts in a large ziplock bag or shallow dish. Pour half of the avocado mixture over the chicken, reserving the other half for later. Ensure the chicken is well-coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

      Cook the Chicken: Preheat your grill or skillet over medium-high heat. Add the olive oil to the skillet if cooking on the stovetop. Remove the chicken from the marinade and discard the used marinade.

        Grill or Sear: Grill the chicken for about 6-7 minutes on each side (depending on thickness) or until fully cooked and the internal temperature reaches 165°F (75°C). If using a skillet, sear the chicken until browned and cooked through.
