Ingredients
  

2 large chicken breasts

1 tablespoon olive oil

Salt and pepper, to taste

8 cups romaine lettuce, chopped

1 ripe avocado, diced

1 cup cherry tomatoes, halved

1/4 cup grated Parmesan cheese

1/4 cup croutons (store-bought or homemade)

1/3 cup Caesar dressing (store-bought or homemade)

Juice of 1 lemon

Fresh parsley, chopped for garnish (optional)

Instructions
 

Prepare the Chicken:

    - Preheat your grill or stovetop grill pan over medium-high heat.

      - Rub the chicken breasts with olive oil and season with salt and pepper.

        - Grill chicken for about 6-7 minutes per side, or until cooked through and juices run clear. Remove from grill, let rest for 5 minutes, and then slice into strips.

          Assemble the Salad:

            - In a large salad bowl, combine the chopped romaine lettuce, diced avocado, halved cherry tomatoes, and half of the grated Parmesan cheese.

              - Add the grilled chicken strips on top.

                Dress and Toss:

                  - Drizzle Caesar dressing over the salad and gently toss to combine. Ensure that the lettuce and toppings are well-coated in dressing.

                    Garnish:

                      - Sprinkle the rest of the Parmesan cheese over the top along with the croutons.

                        - Squeeze fresh lemon juice over the salad for added brightness.

                          Serve:

                            - Optionally, sprinkle with chopped fresh parsley for garnish before serving. Enjoy this refreshing and hearty salad as a meal or a side!
