For the Chicken Gyros:

1 lb boneless, skinless chicken thighs

4 cloves garlic, minced

2 tsp dried oregano

1 tsp ground cumin

1 tsp paprika

1/2 tsp salt

1/2 tsp black pepper

3 tbsp olive oil

Juice of 1 lemon

4 pita bread or flatbreads

Fresh vegetables (tomatoes, cucumbers, red onion) for topping

Fresh parsley or dill, for garnish

For the Tzatziki Sauce:

1 cup Greek yogurt

1/2 cucumber, grated and excess water squeezed out

2 cloves garlic, minced

1 tbsp olive oil

1 tbsp white wine vinegar or lemon juice

Salt and pepper to taste

Fresh dill, chopped (optional)

Instructions
 

Marinate the Chicken: In a large bowl, combine minced garlic, oregano, cumin, paprika, salt, pepper, olive oil, and lemon juice. Add the chicken thighs and coat well. Cover and marinate in the refrigerator for at least 1 hour, preferably overnight for deeper flavor.

    Make the Tzatziki Sauce: In a separate bowl, mix together Greek yogurt, grated cucumber, minced garlic, olive oil, and vinegar or lemon juice. Season with salt, pepper, and chopped dill if desired. Mix well and refrigerate until needed.

      Cook the Chicken: Preheat a grill pan or skillet over medium-high heat. Remove chicken from marinade, letting excess drip off. Cook the chicken for 5-7 minutes on each side, or until fully cooked and golden brown. Remove from heat and let it rest for a few minutes. Slice thinly.

        Warm the Pita: While the chicken is resting, lightly warm the pita or flatbreads in a dry skillet or wrap in aluminum foil and place in a warm oven for about 5 minutes.

          Assemble the Gyros: Lay a warm pita on a plate, add a generous amount of sliced chicken, and top with fresh vegetables like tomatoes, cucumbers, and red onions. Drizzle with tzatziki sauce and garnish with fresh parsley or dill.

            Serve: Roll up the pita as a wrap or keep it open-faced and serve immediately with extra tzatziki on the side for dipping.
