2 cups rolled oats

1 ½ cups almond milk (or any milk of your choice)

2 medium apples, peeled, cored, and diced

1/4 cup maple syrup (or honey)

1 teaspoon vanilla extract

1 teaspoon cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon salt

1/2 cup chopped walnuts or pecans (optional)

1/4 cup raisins or dried cranberries (optional)

Preheat the Oven: Preheat your oven to 350°F (175°C). If using muffin liners, place them in a muffin tin or spray the tin with cooking spray.

    Prepare the Apple Mixture: In a medium bowl, combine diced apples with 1 tablespoon of maple syrup, 1/2 teaspoon cinnamon, and a pinch of salt. If you want a bit of tartness, feel free to add a splash of lemon juice. Set aside to let the flavors mingle.

      Mix the Oatmeal Base: In a large bowl, mix together the rolled oats, almond milk, remaining maple syrup, vanilla extract, cinnamon, nutmeg, and salt. Stir until well combined. You can add the chopped nuts and raisins or cranberries at this stage if desired.

        Combine: Gently fold in the prepared apple mixture into the oatmeal base, ensuring that the diced apples are evenly dispersed throughout.

          Fill the Muffin Tin: Spoon the oatmeal mixture into the prepared muffin tin, filling each cup to about three-quarters full. This ensures that they have room to rise slightly while baking.

            Bake: Place the muffin tin in the preheated oven and bake for about 25-30 minutes, or until the tops are lightly golden and firm to the touch.
