For the Cake:

2 cups all-purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

½ teaspoon salt

1 teaspoon cinnamon

½ teaspoon nutmeg

½ cup unsalted butter, softened

1 cup granulated sugar

½ cup brown sugar, packed

3 large eggs

1 teaspoon vanilla extract

1 cup buttermilk

2 cups peeled and diced apples (preferably Granny Smith)

1 cup chopped pecans (toasted)

For the Caramel Glaze:

½ cup unsalted butter

1 cup brown sugar, packed

¼ cup heavy cream

1 teaspoon vanilla extract

Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan or a bundt pan.

    Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.

      Prepare the Batter: In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Add eggs one at a time, mixing well after each addition, then stir in the vanilla extract.

        Combine Ingredients: Gradually add the dry mixture to the butter mixture, alternating with the buttermilk. Begin and end with the dry mixture. Stir until just combined—do not overmix.

          Add Apples and Pecans: Gently fold in the diced apples and chopped pecans into the batter.

            Bake: Pour the batter into the prepared baking pan and spread it evenly. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.

              Cool the Cake: Once baked, remove from the oven and allow the cake to cool in the pan for about 10 minutes, then turn it out onto a wire rack to cool completely.

                Make the Caramel Glaze: In a saucepan over medium heat, melt the ½ cup of butter. Stir in the brown sugar and heavy cream. Bring to a gentle boil while stirring constantly. Allow the mixture to boil for 1 minute, then remove from heat and stir in the vanilla extract and a pinch of salt.

                  Glaze the Cake: Once the cake has cooled, drizzle the warm caramel glaze over the top, allowing it to flow down the sides. If desired, you can sprinkle additional toasted pecans on top for garnish.
