Ingredients

For the Pancakes:

1 cup all-purpose flour

2 tablespoons sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 teaspoon cinnamon

1 cup milk

1 large egg

2 tablespoons melted butter

1 teaspoon vanilla extract

For the Apple Filling:

2 medium apples (preferably Granny Smith or Honeycrisp), peeled and diced

2 tablespoons butter

1 teaspoon cinnamon

1 tablespoon brown sugar

1/2 teaspoon lemon juice

Pinch of salt

For Assembly:

Maple syrup (for drizzling)

Fresh whipped cream (optional)

Instructions

Prepare the Apple Filling: In a medium skillet over medium heat, melt the butter. Add the diced apples, cinnamon, brown sugar, lemon juice, and a pinch of salt. Sauté until the apples are soft and caramelized, about 5-7 minutes. Remove from heat and set aside to cool slightly.

Make the Pancake Batter: In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon. In another bowl, combine the milk, egg, melted butter, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.

Cook the Pancakes: Heat a non-stick skillet or griddle over medium heat. Lightly grease with cooking spray or butter. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges appear set, about 2-3 minutes. Flip and cook for another 1-2 minutes until golden brown. Repeat until all the batter is used, adjusting the heat as necessary.

Assemble the Sandwiches: Take two pancakes and spoon a generous amount of the apple filling onto the top of one pancake. Place the second pancake on top to create a sandwich. Repeat with the remaining pancakes and apple filling.

Serve: Drizzle with maple syrup, and add a dollop of whipped cream if desired. Enjoy your delightful pancake sandwiches warm!
