Apple Cinnamon Oatmeal Bake

2 cups rolled oats

2 medium apples, peeled and diced (preferably Granny Smith or Honeycrisp)

1/2 cup brown sugar (packed)

1 teaspoon ground cinnamon

1/2 teaspoon nutmeg

1 teaspoon baking powder

1/2 teaspoon salt

2 cups milk (dairy or non-dairy)

1/4 cup unsweetened applesauce

2 large eggs

1 teaspoon vanilla extract

1/2 cup chopped walnuts or pecans (optional)

1/4 cup raisins or dried cranberries (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x9-inch baking dish with cooking spray or butter.

    Combine Dry Ingredients: In a large mixing bowl, combine the rolled oats, brown sugar, cinnamon, nutmeg, baking powder, and salt. Mix well to ensure even distribution of the dry ingredients.

      Prepare the Apples: Add the diced apples to the bowl with the dry ingredients. Stir to coat the apple pieces with the mixture.

        Mix Wet Ingredients: In a separate bowl, whisk together the milk, applesauce, eggs, and vanilla extract until well combined.

          Combine Dry and Wet Mixtures: Pour the wet ingredients into the bowl with the dry mixture and fold them together until just combined. If you're adding nuts and dried fruit, fold them in at this stage.

            Pour into Baking Dish: Transfer the mixture into the prepared baking dish, spreading it out evenly.

              Bake: Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
