2 cups all-purpose flour

1 cup granulated sugar

1 tablespoon baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon salt

1/2 cup unsalted butter, melted

2 large eggs

1 cup buttermilk (or 1 cup milk mixed with 1 tablespoon vinegar)

1 teaspoon vanilla extract

2 cups peeled, diced apples (e.g., Granny Smith or Honeycrisp)

Optional: 1/2 cup chopped walnuts or pecans for added texture

Coarse sugar for sprinkling on top

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or lightly grease with cooking spray.

    Mix Dry Ingredients: In a large mixing bowl, sift together the flour, granulated sugar, baking powder, baking soda, cinnamon, and salt. Whisk well until all dry ingredients are combined.

      Combine Wet Ingredients: In another bowl, whisk together the melted butter, eggs, buttermilk, and vanilla extract until the mixture is smooth and evenly combined.

        Combine Wet and Dry Mixtures: Gently fold the wet ingredients into the dry ingredients using a spatula. Be careful not to overmix; the mixture should be slightly lumpy.

          Add Apples and Nuts: Gently fold in the diced apples and the optional nuts, making sure they are evenly distributed throughout the batter.

            Fill the Muffin Tin: Evenly distribute the muffin batter into the prepared muffin tin, filling each cup about 2/3 full. Sprinkle the tops with coarse sugar for a delightful crunch.
