1 cup sweetened shredded coconut

1 cup almond flour

1/3 cup maple syrup

1 tsp vanilla extract

1/4 tsp salt

1/2 cup chocolate chips (dark or semi-sweet)

2 tbsp coconut oil, melted

1/2 cup whole almonds (raw or roasted, unsalted)

Instructions
 

Mix the Coconut Mixture: In a large mixing bowl, combine the shredded coconut, almond flour, maple syrup, vanilla extract, and salt. Stir until all the ingredients are well-blended and form a sticky mixture.

    Prepare the Base: Line an 8x8 inch (or similar size) baking dish with parchment paper, allowing some overhang for easy removal later. Press the coconut mixture evenly into the bottom of the dish, creating a uniform layer. Place in the refrigerator to set while you prepare the chocolate topping.

      Melt the Chocolate: In a microwave-safe bowl, combine the chocolate chips and melted coconut oil. Microwave in 20-second intervals, stirring in between, until the mixture is fully melted and smooth.

        Assemble the Bars: Remove the coconut base from the refrigerator. Spread the melted chocolate evenly over the coconut layer, smoothing with a spatula. Sprinkle the whole almonds evenly over the chocolate, pressing them gently into the chocolate to ensure they stick.

          Chill and Set: Return the baking dish to the refrigerator for at least 30 minutes, or until the chocolate is set completely.

            Cut into Bars: Once set, remove the bars from the baking dish using the parchment overhang. Place on a cutting board and cut into desired sizes.
