2 medium zucchinis, sliced into 1/4-inch thick rounds

1 cup breadcrumbs (panko for extra crunch)

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

2 large eggs, beaten

Prepare the Zucchini: Wash and dry the zucchinis. Slice them into uniform 1/4-inch thick rounds to ensure even cooking.

    Make the Coating Mixture: In a large bowl, combine the breadcrumbs, grated Parmesan, garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix well until evenly distributed.

      Coat the Zucchini: Dip each zucchini slice into the beaten eggs, allowing any excess to drip off. Then coat each slice with the breadcrumb mixture, pressing gently to adhere the crumbs well.

        Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes.

          Arrange in the Air Fryer Basket: Lightly spray the air fryer basket with olive oil. Place the coated zucchini chips in a single layer, making sure they are not overlapping. It may be necessary to work in batches, depending on the size of your air fryer.

            Air Fry the Chips: Spray the tops of the zucchini chips lightly with olive oil spray. Cook in the air fryer for 10-12 minutes, flipping halfway through, until they are golden brown and crispy.

              Cool and Serve: Once done, remove the zucchini chips from the air fryer and let them cool for a couple of minutes. They will continue to crisp up as they cool. Serve warm as a healthy snack or appetizer!
