1 ½ cups grated zucchini (excess moisture squeezed out)

1 cup all-purpose flour

1/2 cup rolled oats

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup brown sugar, packed

1/4 cup granulated sugar

1/2 cup unsalted butter, softened

1 teaspoon vanilla extract

1 large egg

1/2 cup semi-sweet chocolate chips

1/2 cup chopped walnuts (optional)

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Prepare the Zucchini: Grate the zucchini using a box grater or food processor. Place the grated zucchini in a clean kitchen towel and twist it to squeeze out as much moisture as possible. Set aside.

      Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, rolled oats, baking soda, baking powder, cinnamon, and salt. Set aside.

        Cream the Butter and Sugars: In another bowl, cream together the softened butter, brown sugar, and granulated sugar using an electric mixer until light and fluffy (about 2-3 minutes).

          Add Egg and Vanilla: Beat in the egg and vanilla extract until fully combined.

            Combine Mixtures: Gradually add the dry ingredient mixture into the wet mixture in three additions, mixing on low speed until just combined.

              Fold in Zucchini and Mix-ins: Gently fold in the grated zucchini, chocolate chips, and walnuts (if using) until evenly distributed throughout the dough.

                Scoop the Cookies: Using a cookie scoop or spoon, drop generous tablespoons of dough onto the prepared baking sheet, leaving space between each cookie to allow for spreading.
