1 large head of Napa cabbage (or regular cabbage)

1 cup shredded carrots

1 cup red bell pepper, thinly sliced

1 cup cucumber, julienned

1 cup bean sprouts

½ cup fresh cilantro, roughly chopped

½ cup roasted peanuts, roughly chopped

½ cup cooked chicken breast or tofu (optional, for protein)

For the Peanut Sauce:

¼ cup creamy peanut butter

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 tablespoon honey or maple syrup

1 teaspoon sesame oil

1 tablespoon sriracha (adjust for spice preference)

2-3 tablespoons warm water (to thin out the sauce)

Instructions
 

Prepare the Cabbage: Carefully remove the whole leaves from the Napa cabbage. Rinse them under cold water and pat them dry with a clean towel. Set aside - these will be your wraps.

    Make the Peanut Sauce: In a mixing bowl, combine the peanut butter, soy sauce, rice vinegar, honey (or maple syrup), sesame oil, and sriracha. Whisk until well combined. If the sauce is too thick, gradually add warm water until you reach your desired consistency. Taste and adjust seasoning as needed.

      Assemble the Filling: In a large mixing bowl, combine the shredded carrots, sliced red bell pepper, julienned cucumber, bean sprouts, chopped cilantro, and peanuts. If you're using chicken or tofu, add it to the mixture as well. Toss everything together gently.

        Wrap It Up: Take one cabbage leaf and place a generous spoonful of the filling mixture in the center. Drizzle some peanut sauce over the top, then fold the sides of the cabbage leaf inward and roll it up from the bottom to form a wrap. Repeat with the remaining leaves and filling.
